  • 20 g extra virgin olive oil, plus extra to grease
  • 150 g potatoes, peeled and cut into pieces (1 cm - see Tips)
  • 135 g water, plus 2 tablespoons extra
  • 125 g buttermilk
  • 2 tsp dried instant yeast
  • 1 tsp sugar
  • 500 g baker's flour, plus extra to dust
  • 1 ½ tsp sea salt
  • 1 egg
  • 2 tsp linseeds (flaxseeds) (optional)
  • 1 tbsp pumpkin seeds (optional)
  • 1 egg yolk, to glaze
  • butter, to serve
