  • 1665 g water, divided, plus extra to sprinkle
  • 550 g bread flour, plus extra to dust
  • 2 tsp salt
  • 1 tsp Rustic Bread Spice Mix (see Tip) (optional)
  • neutral oil, e.g. vegetable, canola, safflower, to grease
  • 60 g vinegar
  • 30 g lemon juice
